The good fat found in avocados not only contributes to beautiful skin, hair and nails, it also helps you shed unwanted body fat! Avocados increase HDL (good) cholesterol, thereby decreasing levels of LDL (bad) cholesterol (high cholesterol is a common issue found in women with PCOS). Think of it this way: the more good fat you eat (guacamole), the better you will look (bye-bye body fat) and feel (from the high-five your doctor gives you when he sees your lowered cholesterol levels)!
Guacamole is delicious and can be used in a variety of ways. You can eat it as a side dish or in addition to a meal.
Prep time: 5 to 10 minutes
Serves: 4
Ingredients:
3 (small) avocados (or you can use 1 large)
1 garlic clove minced
¼ cup minced red onion
2 TBS minced cilantro
Juice from 1 lime
Directions:
Mix minced garlic, onion and lime juice in a small bowl. Take an avocado and slice all the way around the core, twist and pull apart. Use your knife and gently tap the blade into the large core (to grip it), twist the blade and pull out the core. Pull core off of blade and dispose of it. Cut cubes in each side of the avocado, then use a spoon to scoop out the cubes and put them in the bowl with the lime juice mix. Repeat with each avocado. Chop cilantro and add to bowl. Using a fork, mash all ingredients together. Add salt to taste.
