Recipe of the Week: Healthy Nachos

Nachos get a bad rap for the carb overload and the extra cheese. If you’re not careful, nachos can be a high-calorie fat trap! On the other hand, when you take out some of the yucky ingredients, nachos can be delicious, healthy and a quick fix for your family!

Prep Time: 15 minutes

Cook Time: Less than 10 minutes

Serves: 4

Ingredients:
4 Organic Chicken Breasts
1 bag Organic Tortilla Chips
1 can black beans
1 cup Guacamole (see previous blog for recipe)
½ cup sliced onions
1 Tsp Olive Oil
Salsa
Salt to taste

Directions:
Heat sauté pan over medium heat and coat pan with olive oil (I usually wipe it out to fully coat the pan without using any added oil). Salt the chicken breasts to taste and cook fully, on the both sides, in the pan for about 7 minutes. Meanwhile, fill each plate with a handful of the tortilla chips. When chicken is finished, slice lengthwise into several pieces. Add desired amount of chicken on tortilla chips, followed by black beans, guacamole, onions and salsa. Enjoy!
