Recipe of the Week: Tara’s Wheat Berry Salad

Wheat berries are a whole grain, containing a good amount of fiber, vitamins and nutrients. You know how I’m ALWAYS telling you to eat whole grains as opposed to refined carbohydrates like white rice, pasta and bread? Well, here’s a side dish idea that’s not a common household recipe for most. I implore you to try this recipe and make something new for a change!

My good friend, Tara, made this delicious Wheat Berry Salad tonight, and I just HAD to take a picture and post her recipe. Of course, she found the original recipe online, but improvised to make it her own. I just love the ingenuity!

Ingredients: 
2 cups whole wheat berries (cooked)
1 cup raspberry vinaigrette
1 cup dried cranberries
1/2 cup pine nuts or walnuts

Directions: 
To cook the wheat berries, put 2 cups in a medium saucepan filled with just enough water to cover the berries on low heat. Let the wheat berries slowly cook for about 45 minutes, until they are fully cooked through. Drain water and add wheat berries to a bowl along with the raspberry vinaigrette, dried cranberries and pine nuts or walnuts. Voila!

Enjoy this delicious, healthy side dish (we’re also having watermelon for dessert!).
